Raw Coconut Panna Cotta with Summer Berries @ Beautiful You Australia

Last weekend I was lucky to be presenting at the Beautiful You Australia show. I talked about the benefits of coconut oil, and presented a raw coconut panna cotta recipe, using coconut revolution oil.

I had a great time, it was a fabulous event targeting women interested in beauty, health and fitness. I enjoyed connecting with you and I hope you try this healthy dessert that I am sharing with you today.

Ingredients

Flesh from 3 young Thai coconut

1/3 cup coconut water

1 cup coconut oil melted

1/4 cup raw honey

1 vanilla stick

 

 

 

Method

Bring the water kettle to the boil

Place the coconut oil into a deep metal container

Pour the hot water in and place the coconut oil jar into it so that the oil can melt.

Place the coconut flesh and vanilla into the blender.

Add half of the honey in the blender

Add the coconut water into the blender and blend

Measure one full cup of coconut oil and add the oil and blend again

Fill into serving jars and leave in the fridge to chill and set

Serve with berries and mint.
