Snack on Goji Berry bar for better health

 

These shrivelled red berries are alleged to boost the immune system and brain activity, protect against heart disease and cancer, and can help improve life expectancy.
Goji berries contain vitamin C, vitamin B2, vitamin A, iron, selenium and other antioxidants. These berries along with other colourful fruits, such as blueberries, or strawberries are a great addition to our diet.

Next time when you shop in your favourite health food store, don’t hesitate adding these to your shopping box. You can eat them by its own, or add them to your breakfast cereal, or yoghurt.

Today, I would like to share with you a quick and easy recipe for a healthy goji berry bar.

Goji Berry Bar Recipe:

Preparation time: 20 minutes

Serves: 8

3 cups of almonds or other nuts
¾ cup unsweetened shredded coconut
¾ cup goji berries
½ cup packed pitted dates
3 tbsp melted coconut oil
3 eggs
Pinch of salt

Topping
4 oz of melted unsweetened chocolate
Almonds
Goji berries

Preheat oven to 180 C. Grease cake pan, set aside. Place the ingredients for the bars in bowl, and mix it with your hands until a coarse, chunky dough has formed.
Transfer the mixture to the greased pan, press into an even layer. Bake in the preheated oven for 25 minutes or until browned.
Once fully cooked, remove from the oven and let cool in the pan then slice and serve. If desired, top with melted chocolate, more almonds or any other nuts and goji berries.
