Quinoa Goat Cheese Salad with Nuts and Rocket

This dish is perfect for vegetarians as a main meal, or a side salad paired with pan fried fish, or slow cooked lamb.

What I love about this dish is it’s rich flavour and it is so simple to prepare. This is a perfect meal to enjoy in autumn by the fire place with a glass or Pino Noir.

Serving Size 1 main serve

Equipment: Metal bowl Spatula or wooden spoon

Ingredients

2 tablespoon of creamy goat cheese

1 tablespoon of balsamic vinegar

1 tablespoon of Extra-virgin olive oil

1 pinch of salt

1 pinch of pepper

1⁄2 cup of cooked quinoa

1 tablespoon of roughly cut flat-leaf parsley leaves

1⁄2 cup of cucumber

1/4 of cup crushed almonds

1⁄4 red onion cut into crescents

1 handful of rocket salad

1⁄4 cup of walnuts

1⁄4 cup of olives stones removed

Use 1⁄2 of a small peeled avocado

Method

1. Place goat cheese, into the bowl

2. Add balsamic vinegar

3. Add oil

4. Add salt

5. Add pepper

6. With the spoon mix to a paste.

7. Add quinoa

8. Add parsley

9. Add cucumber

10. Add red onion

11. Add rocket salad

12. Add walnuts

13. Add olives

14. Add almonds

15. Combine well and serve
