Warming Beetroot Soup Recipe

We all love having a warming soup during the winter months.

Today, I would like to share with you a very special recipe of a beetroot soup. There are plenty variations of this simple recipe, this one is cherished by my Polish family.

I have beautiful memories of my mother serving this dish to me throughout my childhood.

This was as far one of my favourite foods. If I was sick and my mum wanted to spoil me, she would prepare this dish for me.

Funny how now I have learned to prepare this dish for my son when he is unwell. Thankfully he loves it as much as I do!

Ingredients:

3 litres of bone broth / Stock (Get the recipe HERE)

5 large beetroots, chopped

1 medium onion, chopped

4 potatoes, peeled, chopped

2 medium carrots, chopped

1 large garlic, peeled, chopped

stock of one bunch of  parsley,

200 ml of sour cream

5 cloves

3 bay leaves

Salt and pepper

Method:

Bring the bone broth to the boil, add to it chopped vegetables such as beets, onions, carrots, garlic and potatoes. Add the dried herbs and cook on low heat for 30 minutes.

Take it of the heat and add parsly and sour cream and serve it.
