Paleo Zucchini Fritters

This is one of my favourite recipes from Andi – her Paleo Zucchini Fritters.

Ingredients

Makes 6-8

  • 6 eggs
  • 1 cup of coconut flour
  • pinch of salt
  • 1/2 cup of nut milk
  • 2 large grated zucchinis
  • 1 brown onion, grated
  • Coconut oil for frying

Method

  • Combine all ingredients, except the oil, into a bowl and mix until you get a pancake batter.
  • Fry in a pan on medium heat like you would a pancake.
  • Serve with dill, mayo and eggs or greens.
