This is one of my favourite recipes from Andi – her Paleo Zucchini Fritters.
- 6 eggs
- 1 cup of coconut flour
- pinch of salt
- 1/2 cup of nut milk
- 2 large grated zucchinis
- 1 brown onion, grated
- Coconut oil for frying
- Combine all ingredients, except the oil, into a bowl and mix until you get a pancake batter.
- Fry in a pan on medium heat like you would a pancake.
- Serve with dill, mayo and eggs or greens.
