Blueberry Almond Flour Muffins

These muffins are dairy free, gluten free and refined sugar free. They are also GAPS diet friendly, and absolutely delicious! They can be eaten at breakfast or as a snack or a sweet treat. They don’t take long to prepare so if you feel like doing some baking this weekend then why not make it healthy. Enjoy!

Blueberry Almond Flour Muffins

Ingredients:

1-1/2 cups almond flour

3 tbsp coconut flour

1/3 cup softened butter

ΒΌ cup honey

5 eggs

1 tablespoon frozen blueberries per muffin (spoon onto the top)

Method:

Combine the muffin ingredients, mixing well.

Place evenly in well-greased muffin pan.

Spoon blueberries onto muffins.

Bake muffins for 15-20 minutes at 150 degrees C or until set in the center.
